the trees

There are 1000 trees in the orchards at Olivopolis. At maturity, each tree produces approximately one gallon of oil a year. The olives are harvested as late in the year as possible — usually the end of November — at peak ripeness, just before the first frost. There are five Italian varieties for our Tuscan Blend, chosen to create a flavorful, fruity oil with a peppery finish. Our Koroneiki, a Greek variety, offers a more delicate, milder counterpoint to the Tuscan.

Lake County's hot, dry summers and cold, wet winters combine with the red, volcanic soil of Olivopolis to create the optimal environment for olive oil production. The trees produce olives with superior flavor.
